Ingredients
- 3–4 pounds beef chuck roast
- 1 large onion, thinly sliced
- 1 cup beef broth
- 1 (10.5-ounce) can condensed French onion soup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon minced garlic
- Salt, to taste
- Freshly ground black pepper, to taste
- 6 hoagie rolls
- 6 slices provolone cheese
Optional Toppings
- Sautéed mushrooms
- Crispy fried onions
- Horseradish sauce
- Dijon mustard
- Fresh parsley, chopped
Instructions
Step 1: Prepare the Slow Cooker
Arrange the sliced onions evenly in the bottom of a 6- to 7-quart slow cooker.
Season the beef chuck roast generously with salt and black pepper, then place it on top of the onions.
Step 2: Add the Cooking Liquid
Pour the beef broth and condensed French onion soup over the roast.
Add the Worcestershire sauce and minced garlic.
Cover with the lid.
Step 3: Slow Cook
Cook on LOW for 8 hours, or until the beef is fork-tender and easily shreds.
Step 4: Shred the Beef
Transfer the roast to a cutting board or large platter.
Using two forks, shred the beef into bite-sized pieces.
Return the shredded beef to the slow cooker and stir it into the cooking juices. Let it sit for 10–15 minutes to absorb even more flavor.
Step 5: Assemble the Sandwiches
Preheat the broiler.
Using a slotted spoon, pile the shredded beef onto the hoagie rolls.
Top each sandwich with a slice of provolone cheese.
Place the sandwiches on a baking sheet and broil for 2–3 minutes, or until the cheese is melted, bubbly, and lightly golden.
Step 6: Serve
Serve the sandwiches immediately with small bowls of the warm cooking liquid (au jus) for dipping.
Storage
Refrigerator: Store the shredded beef and au jus together in an airtight container for up to 4 days.
Freezer: Freeze the beef and juices for up to 3 months. Thaw overnight in the refrigerator before reheating.
To Reheat: Warm the beef gently in its juices on the stovetop, in the slow cooker, or in the microwave until heated through.
Tips for Success
- Chuck roast is ideal because it becomes exceptionally tender after slow cooking.
- Keep the shredded beef in the au jus until serving to maintain maximum moisture and flavor.
- Toast the hoagie rolls before filling them to help prevent sogginess.
- Skim excess fat from the cooking juices before serving, if desired.
- Add extra provolone or a blend of Swiss and provolone for even more cheesy goodness.
Variations
- Mushroom French Dip: Add 8 ounces of sliced mushrooms to the slow cooker.
- Garlic Butter Rolls: Brush the hoagie rolls with garlic butter before broiling.
- Spicy French Dip: Add sliced pepperoncini or a pinch of crushed red pepper flakes.
- Swiss Cheese Version: Substitute Swiss cheese for the provolone.
- Loaded French Dip: Top with caramelized onions and sautéed mushrooms for a steakhouse-inspired sandwich.
