Ingredients
- 1 (3.9-ounce) package cook-and-serve chocolate pudding mix
- 3 cups whole milk
- 12 full-size graham cracker sheets
- ¾ cup miniature semisweet chocolate chips, divided
- 1 (15.25-ounce) box chocolate cake mix
- ½ cup (1 stick) cold unsalted butter, sliced into thin pats
- 10 ounces miniature marshmallows
Optional Toppings
- Vanilla ice cream
- Fresh whipped cream
- Chocolate syrup
- Crushed graham crackers
- Extra chocolate chips
Instructions
Step 1: Prepare the Chocolate Pudding
Preheat the oven to 350°F (175°C).
In a medium saucepan, whisk together the cook-and-serve chocolate pudding mix and whole milk. Cook over medium heat, stirring constantly, until the mixture comes to a gentle boil and thickens to a smooth pudding consistency, about 5–8 minutes.
Remove from the heat and let the pudding cool for about 15 minutes, stirring occasionally.
Step 2: Assemble the Base
Pour the warm pudding into a greased 9×13-inch baking dish, spreading it into an even layer.
Arrange the graham cracker sheets over the pudding in a single layer, breaking them into smaller pieces as needed to cover the surface.
Sprinkle ½ cup of the miniature chocolate chips evenly over the graham crackers.
Step 3: Add the Cake Mix
Evenly sprinkle the dry chocolate cake mix over the graham cracker layer. Do not stir.
Distribute the sliced butter evenly across the top of the cake mix so it covers as much of the surface as possible.
Step 4: First Bake
Bake for 25 minutes. During baking, the butter will melt into the cake mix, creating a rich, fudgy topping.
Step 5: Stir the Cobbler
Carefully remove the baking dish from the oven.
Using a large spoon or sturdy spatula, gently stir the cobbler until all of the dry cake mix is moistened. Mix just enough to eliminate any dry pockets while leaving some graham cracker pieces intact.
Step 6: Add the Toppings
Evenly sprinkle the miniature marshmallows over the surface.
Top with the remaining ¼ cup of miniature chocolate chips.
Step 7: Final Bake
Return the cobbler to the oven and bake for 5–8 minutes, or until the marshmallows are puffed and lightly golden.
For an extra-toasted marshmallow topping, broil for 30–60 seconds, watching carefully to prevent burning.
Step 8: Rest and Serve
Allow the cobbler to rest for 15 minutes before serving.
Scoop into bowls and serve warm with vanilla ice cream or freshly whipped cream for the ultimate s’mores-inspired dessert.
Storage
Refrigerator: Store leftovers covered in the refrigerator for up to 4 days.
Freezer: Freeze individual portions in airtight containers for up to 2 months.
To Reheat: Microwave individual servings for 30–60 seconds or warm in a 300°F (150°C) oven until heated through.
Tips for Success
- Use cook-and-serve pudding mix, not instant pudding, for the proper texture.
- Slice the butter into very thin pats to help it melt evenly over the cake mix.
- Stir thoroughly after the first bake to eliminate any dry cake mix.
- Watch the marshmallows closely during the final bake—they brown quickly.
- Add chopped milk chocolate bars or peanut butter cups for an even richer dessert.
- Serve warm for the best gooey, melty texture.
Variations
- Peanut Butter S’mores Cobbler: Add chopped peanut butter cups between the graham crackers and cake mix.
- Cookies & Cream: Sprinkle crushed chocolate sandwich cookies over the marshmallows before the final bake.
- Salted Caramel: Drizzle caramel sauce over each serving and finish with a pinch of flaky sea salt.
- Double Chocolate: Stir an additional ½ cup of chocolate chips into the cobbler after the first bake.
