📝 Ingredients

  • 1 pound (450g) spaghetti
  • 1½ cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 small red onion, thinly sliced
  • 1 can (2¼ ounces/65g) sliced black olives, drained
  • 1 cup shredded Parmesan cheese
  • 1 bottle (16 ounces/475ml) Italian dressing
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

👩‍🍳 Instructions

1. Cook the Spaghetti

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package directions until al dente. Drain well and rinse under cold running water to stop the cooking process. Allow the pasta to drain completely.

2. Prepare the Vegetables

While the pasta cools, halve the cherry tomatoes, dice the cucumber and bell peppers, thinly slice the red onion, and drain the black olives.

3. Make the Salad

Transfer the cooled spaghetti to a large mixing bowl. Add the tomatoes, cucumber, bell peppers, onion, olives, and Parmesan cheese.

4. Add the Dressing

Pour the Italian dressing over the salad. Sprinkle with Italian seasoning, garlic powder, salt, and black pepper. Toss thoroughly until all the ingredients are evenly coated.

5. Chill

Cover the bowl and refrigerate for at least 2 hours to allow the flavors to blend. Toss again before serving.

6. Serve

Garnish with chopped fresh parsley and additional Parmesan cheese if desired. Serve chilled.

💡 Tips

  • Rinse the cooked spaghetti with cold water to keep the pasta firm and prevent sticking.
  • Chill the salad for at least 2 hours for the best flavor.
  • Toss with a little extra Italian dressing just before serving if the pasta has absorbed the dressing.
  • Dice the vegetables into similar-sized pieces for the best texture.
  • Freshly grated Parmesan provides the best flavor.
